Southern Pecan Beer Blondies w/ Pecan Beer Frosting

Southern Pecan Beer Blondies

  • 1/2 cup unsalted butter (1 stick), melted
  • 1 cup dark brown sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 1/2 teaspoon sea salt
  • 1 teaspoon baking powder
  • 1 cup plus 1 tablespoon of all purpose flour, sifted
  • 1/2 cup toasted and coarsely chopped pecans
  • 1/2 cup Lazy Magnolia Southern Pecan Beer, at room temperature

Optional: Beer Simple Syrup

  • 1/4 cup dark brown sugar
  • 1/2 cup Lazy Magnolia Southern Pecan Beer, at room temperature

Southern Pecan Beer Frosting

  • 1/2 cup unsalted butter (1 stick), softened
  • 2 1/2 cups powdered sugar, sifted
  • 1/2 teaspoon vanilla
  • 4 tablespoons Lazy Magnolia Southern Pecan Beer, at room temperature
  • 1 pinch sea salt
  • 1/2 cup toasted and coarsely chopped pecans

Description:

Yield: About 30, 1.5" squares

Instructions:

Southern Pecan Beer Blondies

1. Preheat oven to 350°F.

2. Butter an 8" x 8" baking pan and place to the side.

3. In a large bowl, combine melted butter and sugar and beat until light and fluffy. Add the egg and vanilla and continue to blend well.

4. Add the sea salt, baking powder and flour and combine well using a rubber spatula. Stir in the beer and pecans.

5. Spread the mixture into the prepared pan and bake for 20-25 minutes or until set in the middle, rotating the pan half way through baking time.

6. Allow to cool completely on a baking rack. Once cooled, cut into equal 1.5" squares.

Optional: Beer Simple Syrup

1. In a large bowl, combine sugar and beer. Slowly stir ingredients with a rubber spatula until sugar has completely dissolved.

2. Spoon about 1 teaspoon of syrup on top of each blondie square.

Southern Pecan Beer Frosting

1. In a large bowl, slowly cream the butter and powdered sugar until just combined. Add the vanilla, beer and sea salt and continue to mix at a faster speed until light and fluffy- about 5 minutes.

2. Add the pecans and stir well with a rubber spatula.

3. Right before serving, place about a tablespoon of frosting on top of each blondie.
