Joe's Southern Pecan Beer Pancakes
  • 2 cups packaged biscuit mix
  • 2 T. sugar
  • ½ tsp. ground cinnamon
  • Dash ground nutmeg
  • 3 extra large eggs, beaten
  • ½ cup Lazy Magnolia Southern Pecan Beer
  • 2 T. cooking oil
  • Butter & Maple Syrup

Description:

One of our Facebook fans shared this recipe with us and wanted to make sure to give her husband, Joe, credit for his delicious invention.

Instructions:

Mix the dry (first 4) ingredients in a mixing bowl. Stir together the wet (next 3) ingredients in a separate bowl. Add the dry ingredients to the wet and stir just until moistened (batter will still be lumpy).

Use about ¼ cup batter to make each pancake. Cook on a hot, lightly greased griddle about 2-3 minutes on each side or until the pancakes are golden. Serve with butter & maple syrup.

Makes about 12 4 inch pancakes.

If you want thinner pancakes, you can add a little bit more beer.
