  • 1 medium head green cabbage, shredded
  • 1 medium head red cabbage, shredded
  • 1 carrot, shredded
  • 2 tablespoons green onion, minced
  • 1/2 cup mayonnaise
  • 1/2 cup sugar
  • 1/4 cup Deep South
  • 1/4 teaspoon celery seed
  • 1/4 teaspoon paprika
  • 1/4 cup Dijon mustard
  • salt and black pepper

Description:

As the story goes, a hungry Streeter McClure came home after a night of drinking to a fridge stocked with only a tomato, an onion, a leftover cheeseburger and two cans of beer. When he managed to whip up something edible with those ingredients, McClure knew he was on to something, and spun his late-night culinary chops into a cookbook that teaches the art of beer-based cuisine. This recipe is an a simple Pale Ale-infused coleslaw from the book that's perfect for picnics.

Serves 3 to 5 people

Instructions:

Combine the shredded vegetables and green onion in a large bowl.

In a separate bowl, combine the mayonnaise, sugar, beer, celery seed and mustard; season with salt and black pepper to taste.

Add the dressing to the cabbage mixture and toss. Refrigerate 1 hour before serving.
